Microgreens Salad with Lime Vinaigrette-Kitchen Garden Recipes
Microgreens are all the rage right now and for good reason, they’re healthy, grow quickly, and can be easily grown indoors. While microgreens can be used in a variety of ways, microgreen salads are fantastic for filling in the gaps that happen with seasonal eating.
Making a Microgreen Salad
Microgreens are harvested when they’re just a couple of inches tall which means they’re going to be very tender. Because of this I like to thinly slice or chop any other salad ingredients so they don’t overpower the microgreens.
Today I would like to share very easily and quick salads recipes.
Ingredients
1 pkg microgreens
6 radishes, halved or sliced
2 Tbsp lime juice
1/8 tsp dry mustard powder
1/4 tsp salt
4 Tbsp olive oil
coarse sea salt, to taste
ground pepper, to taste
Method
Place the microgreens and radishes into a serving bowl and reserve in the refrigerator until ready to serve.
Whisk together the remaining ingredients, cover and refrigerate until ready to serve.
At the last moment before serving, dress the salad lightly with dressing, sprinkle with sea salt and fresh ground pepper.
Where to Get Microgreens
During the summer, it’s too hot for us to grow lettuce. Microgreens are grown exactly like micro herbs and can be grown quite easily in an indoor garden.
While you can also buy microgreens in some grocery stores and farmer’s markets. But they are fairly expensive. While when you grow them you just need seeds, a container, growing medium, and light. Following item is a good solution.
